Grilled Paneer and Veggies/h2>

It's slabs of cheese with roasted veggies.

Preheat oven to 425F/220C. Peel and cut yams into half-inch cubes. Halve and peel onion and cut into half-inch wedges. Toss with olive oil, salt, and pepper. Roast in oven until tender, about 25 minutes. Toss halfway through.

Halve tomatoes. Finely chop cilantro and set aside. Halve lemon and cube avocado. Combine cilantro, cumin, garlic, and chilli to taste. Add lemon and olive oil until loose and drizzly.

Cut paneer into centimeter-thick (1/3 inches) slices. Heat in pan over medium-high heat until browned.

Add tomatoes, sweet potato, onion, avocado, lemon, and chili to bowl or plate. Toss to combine. Top with paneer, drizzle with that sweet chimichurri.
